  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 12 tbsp salted butter, melted
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice

Instructions

  1. Simmer apple cider in a saucepan until reduced to about 1 cup; cool.
  2. Mix cold cream cheese, sugar, and vanilla until smooth for the cheesecake filling.
  3. In another bowl, beat softened butter with sugars until fluffy; add egg yolks and vanilla.
  4. Combine flour, baking powder, baking soda, salt, and spices; gradually mix into wet ingredients.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  6. Scoop dough onto the baking sheet; flatten slightly and place about a teaspoon of cheesecake filling in the center before sealing with more dough.
  7. Bake for about 11 minutes or until golden around the edges; brush with melted butter and sprinkle with spiced sugar mix while warm.
