  • ½ cup unsalted butter, softened
  • ½ cup sugar
  • ¼ cup light brown sugar, gently packed
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • 1/8 teaspoon salt
  • ¾ teaspoon cinnamon
  • ¾ teaspoon nutmeg
  • ½ teaspoon allspice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and both sugars until smooth. Add the egg and apple cider; mix until well combined.
  3. In another bowl, whisk together flour, cream of tartar, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually combine the dry ingredients with the wet mixture until just blended.
  5. Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet. Roll each into a ball.
  6. In a small bowl, combine sugar and cinnamon for coating. Roll dough balls in this mixture before placing them back on the sheet.
  7. Bake for 12–15 minutes until edges are lightly golden. Allow cooling on the sheet for a few minutes before transferring to wire racks.
