  • ¼ cup cold butter (for crumb topping)
  • 1 apple (peeled and finely diced for drizzle)
  • 2 tbsp butter (for drizzle)
  • 2 tbsp brown sugar (for drizzle)
  • ½ tsp cinnamon (for drizzle)
  • ¼ cup water (for drizzle)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream together softened butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and sour cream.
  4. Gradually combine wet and dry ingredients until just mixed. Fold in diced apples gently.
  5. Pour batter into the prepared pan.
  6. For the crumb topping, mix brown sugar, flour, and cinnamon; cut in cold butter until crumbly and sprinkle over the batter.
  7. Bake for 40–45 minutes or until a toothpick comes out clean.
  8. Prepare the drizzle by cooking diced apple with butter, brown sugar, cinnamon, and water until thickened; drizzle over cooled cake.
