  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 450 g granulated sugar (divided)
  • 4 egg yolks
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 2 tbsp cornstarch
  • 2 tsp vanilla bean paste
  • Salt

Instructions

  1. Prepare the apples by peeling, coring, and thinly slicing them. Toss with 150 g sugar and salt; set aside.
  2. Cook the apple slices in a saucepan over medium heat until tender and slightly caramelized (20-25 minutes). Let cool.
  3. For the vanilla custard, whisk together 150 g sugar, cornstarch, salt, and egg yolks until smooth. Heat milk until simmering; gradually add to egg mixture while whisking to avoid curdling. Return to heat and cook until thickened (5-7 minutes). Stir in vanilla bean paste.
  4. In a baking mold, layer half of the cooked apples followed by half of the custard. Repeat layers and refrigerate for at least one hour before serving.
