  • 4 large apples (2 Honeycrisp and 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 5 tbsp butter (for streusel topping)
  • 1/2 cup all-purpose flour
  • 1/4 cup melted butter (for icing)
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla
  • 1/21 tsp cinnamon (based on your preference)
  • 2 tbsp cornstarch (dissolved in 3 tbsp water)

Instructions

  1. Preheat oven to 400°F and grease a muffin tin with softened butter.
  2. Press each cinnamon roll into the muffin cups, forming cavities for filling.
  3. Prepare the apple filling by mixing sliced apples with brown sugar, cinnamon, lemon juice, melted butter, and cornstarch dissolved in water.
  4. Microwave or stovetop heat the apple mixture until thickened.
  5. Fill each cinnamon roll cavity with apple filling using a slotted spoon to remove excess syrup.
  6. Combine streusel topping ingredients until crumbly; sprinkle over filled rolls.
  7. Bake for about 15 minutes, covering loosely with foil for the first five minutes.
  8. While baking, whisk together icing ingredients until smooth.
  9. Allow rolls to cool slightly before drizzling icing over them.
