  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  3. In a separate bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla extract; mix until combined.
  5. Gradually incorporate dry ingredients into wet mixture until just combined.
  6. Fold in the chopped apple.
  7. In a small bowl, combine sugar and cinnamon for coating.
  8. Roll tablespoon-sized dough balls in the cinnamon-sugar mixture.
  9. Place on the prepared baking sheet about 2 inches apart and bake for 8–10 minutes until edges are golden brown.
  10. Allow to cool slightly before transferring to a wire rack.
