  • 2 soft- or medium-boiled eggs
  • 1 cup sliced mushrooms
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • Sliced avocado
  • 1 tsp olive oil
  • 1 tsp everything bagel seasoning
  • Salt & pepper to taste

Instructions

  1. Boil the Eggs: Bring water to a boil in a pot. Gently add eggs and cook for 7-8 minutes for a jammy center. Cool in cold water, peel, and slice.
  2. Sauté the Vegetables: Heat olive oil in a skillet over medium heat. Sauté mushrooms for 4-5 minutes until browned. Add broccoli and cook until tender (about 2-3 minutes), then set aside. Blister cherry tomatoes in the same pan for about 2-3 minutes until softened.
  3. Assemble the Bowl: On a plate or bowl, arrange sliced avocado, top with sautéed mushrooms, broccoli, blistered tomatoes, and halved eggs.
  4. Season: Sprinkle everything bagel seasoning over the top and add salt and pepper to taste before serving warm.
