  • 4 (8-inch) tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz mushrooms, sliced
  • Olive oil (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Microwave sliced mushrooms in a microwave-safe bowl for 2 to 3 minutes, then drain excess liquid.
  3. Brush one side of each tortilla with olive oil and place oiled side down on a baking sheet.
  4. On one half of each tortilla, layer half the cheddar cheese, followed by spinach and mushrooms. Top with remaining cheese before folding over.
  5. Bake for about 6 minutes until golden brown. Flip carefully and bake for an additional 6-7 minutes until both sides are crispy.
  6. Allow to cool slightly before slicing into wedges and serve warm.
