  • 2 medium zucchinis
  • ½ cup sugar
  • ¼ cup olive oil
  • ¼ cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ⅓ cup dark chocolate chips
  • ½ cup walnuts

  1. Preheat your oven to 350°F (180°C) and prepare a loaf pan by lining it with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Stir in sugar, olive oil, almond milk, and vanilla until combined.
  3. Grate the zucchinis using a box grater, squeeze out excess moisture, and fold into the banana mixture.
  4. Add flour, baking powder, baking soda, and salt to the bowl. Mix gently until just combined.
