  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half or full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup grated Parmesan cheese (or plant-based alternative)
  • Fresh herbs: chives, thyme, sage

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook for 40–50 minutes until caramelized.
  2. In a large pot, bring water to a boil. Add chopped potatoes and cook for about 20 minutes until fork-tender.
  3. Drain potatoes and mash until smooth. Mix in butter, kosher salt, and half & half or coconut milk.
  4. Stir in half of the caramelized onions and grated Parmesan cheese until well combined.
  5. Transfer to a serving bowl and top with remaining onions and fresh herbs before serving.
