  • 1/4 cup unsweetened applesauce or Greek yogurt

  • 1 1/2 cups grated zucchini

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the oil, brown sugar, granulated sugar, eggs, applesauce (or yogurt), and vanilla extract until smooth.
  4. Fold in the grated zucchini into the wet mixture.

  6. Pour the batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
