  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin pan with paper cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually add the dry ingredients until just combined.
  4. In another bowl, beat cream cheese with granulated sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin tins about 3/4 full with batter and top each with cream cheese mixture; swirl gently using a toothpick.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Cool for 10 minutes in the pan before serving.
