  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 375°F and line muffin pan with paper cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, sugars, eggs, oil, and vanilla until smooth. Gradually add dry ingredients until just combined.
  4. In another bowl, beat cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin cups 3/4 full with batter; dollop cream cheese mixture on top and swirl gently with a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick comes out clean from the muffin part. Cool slightly before serving.
