  • 3 tbsp (38 g) granulated white sugar
  • 3/4 cup (168 g) unsalted butter, softened
  • 1/4 cup (50 g) granulated white sugar
  • 165 g light brown sugar, packed
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth. Chill in the fridge.
  2. For the cookie dough, cream together softened unsalted butter and sugars until fluffy. Add egg yolks and vanilla; mix well.
  3. In a separate bowl, combine flour, black cocoa powder, baking powder, and salt. Gradually add to the wet mixture until fully incorporated.
  4. Preheat your oven to 350°F (175°C). Form dough balls, flatten slightly, place cheesecake filling in the center, and enclose it before rolling into balls.
