  • 1 can blueberry pie filling (21 oz)
  • 1 lemon (zested)
  • 1 egg (separated)
  • 2 ½ cups powdered sugar
  • ¼ cup lemon juice

Instructions

  1. Preheat oven to 425°F.
  2. Allow pie crusts to reach room temperature while preparing the filling.
  3. In a bowl, mix blueberry pie filling with lemon zest.
  4. Roll out pie crusts and cut into 4-inch circles.
  5. Place a tablespoon of filling on each circle, brush edges with egg yolk, fold and seal.
