  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon sugar (optional)
  • Salt and pepper, to taste
  • 1/4 cup olive oil for chili oil
  • 1 tablespoon chili flakes (adjust based on preferred spice level)
  • 1 garlic clove, minced

Instructions

  1. In a skillet, heat olive oil and butter over medium-low heat. Add sliced onions and salt; cook for about 25-30 minutes until golden brown.
  2. In another pan on low heat, combine olive oil, chili flakes, minced garlic, and salt. Simmer gently for 5 minutes.
  3. Boil salted water and cook pasta according to package directions until al dente. Reserve some pasta water before draining.
  4. Add caramelized onions and cooked pasta back into the skillet with some reserved pasta water if needed. Drizzle with chili oil to taste and toss well.
  5. Plate the dish and garnish with fresh parsley or Parmesan cheese if desired.
