Ingredients

Scale
  • 34 large carrots (to yield about 2 cups of ribbons)
  • 1 Tbsp ghee or butter
  • 1/2 tsp fresh minced rosemary (or 1/4 tsp dried)
  • 1/2 tsp fresh minced parsley (or 1/4 tsp dried)
  • 1/4 tsp salt

Instructions

  1. Wash the carrots thoroughly. Use a vegetable peeler to slice them into long ribbons, rotating as you go until too thin to peel.
  2. Bring about an inch of water to a boil in a saucepan. Place carrot ribbons in a steamer basket or colander over the boiling water, cover, and steam for approximately 3 minutes until crisp-tender.
  3. In a small bowl, mix ghee or butter with minced rosemary, parsley, and salt. Add the steamed carrot ribbons to the bowl and toss gently to coat. Serve immediately.
