  • 1 lb boneless skinless chicken breast (or thighs)
  • 1 ½ lbs yukon gold potatoes (or red potatoes)
  • 5 cups chicken broth
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 1 cup half-and-half
  • ¼ cup flour
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. In a large soup pot, cook the turkey bacon slowly over low heat until crispy. Set aside and reserve drippings.
  2. Season chicken with salt and pepper, then sear in olive oil until golden on both sides. Set aside.
  3. In the same pot, sauté onions, carrots, and celery in reserved drippings until softened.
  4. Stir in garlic, hot sauce, and Worcestershire sauce.
  5. Sprinkle flour over vegetables; cook for about 2 minutes before gradually adding chicken broth while stirring continuously.
  6. Add cubed potatoes to the mixture; bring to a boil then reduce heat to simmer.
  7. Return seared chicken to the pot; simmer until potatoes are fork-tender (about 20 minutes).
  8. Stir in half-and-half and serve topped with shredded cheddar cheese and green onions.
