  • 2/3 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 3/4 cups heavy cream (divided)
  • 9 oz semi-sweet chocolate (finely chopped)
  • 1 1/2 cups fresh raspberries
  • 9 oz white chocolate (finely chopped)
  • Unflavored powdered gelatin

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a springform pan.
  2. Prepare the brownie base by blending flour, cocoa powder, sugar, eggs, and melted butter. Bake for about 24 minutes; let cool.
  3. For the chocolate mousse, melt semi-sweet chocolate and fold in whipped cream mixed with dissolved gelatin. Spread over the cooled brownie base and refrigerate until set.
  4. Make the raspberry mousse by pureeing raspberries, mixing with whipped cream and melted white chocolate, then adding gelatin. Pour over the chocolate layer and chill until firm.
  5. Create the vanilla mousse with melted white chocolate and whipped cream mixed with honey and gelatin; layer on top of the raspberry mousse.
  6. Decorate with ganache made from semi-sweet chocolate and heavy cream, garnishing with fresh raspberries before serving.
