  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 cups grated zucchini (about 3 medium zucchinis)
  • 12 oz semi-sweet chocolate chips (divided—8 oz for the bread mixture, remaining 4 oz for topping)

Instructions

  1. Preheat your oven to 350°F and prepare two greased loaf tins.
  2. In a large mixing bowl, whisk together granulated sugar, eggs, vegetable oil, and vanilla extract until smooth.
  3. Add flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg; mix until combined.
  4. Fold in grated zucchini and 8 oz of chocolate chips.
  5. Divide the batter between the loaf tins and top each with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick comes out clean. Allow to cool before slicing.
