Ingredients

Scale
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup unsalted butter, melted
  • ⅓ cup brown sugar
  • 1 ½ tsp cinnamon
  • ½ cup powdered sugar
  • 1 tbsp milk

Instructions

  1. Cream together softened butter and granulated sugar until light and fluffy. Mix in the egg and vanilla extract until well combined.
  2. In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined.
  3. Roll out the dough between two sheets of parchment paper into a rectangle about ¼-inch thick.
  4. Prepare the cinnamon filling by mixing melted butter, brown sugar, and cinnamon; spread evenly over the rolled dough.
  5. Roll the dough tightly into a log shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) while chilling the dough. Line a baking sheet with parchment paper.
  7. Slice the chilled dough into rounds approximately ¼-inch thick and place them on the prepared baking sheet.
  8. Bake for 10–12 minutes or until edges are lightly golden; allow cooling on wire racks before glazing.
  9. To make the glaze, mix powdered sugar, milk, and vanilla extract until smooth; drizzle over cooled cookies.
