  • 2 cups ricotta cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 pre-made pie crusts
  • 1 large egg (for egg wash)
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios
  • Maraschino cherries for decoration

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, and whisk until smooth. Fold in mini chocolate chips.
  3. Roll out one pie crust and place it in a baking dish. Pour the ricotta mixture over the crust.
  4. Roll out the second pie crust on top of the filling. Brush with egg wash and sprinkle with sugar; cut slits for steam.
  5. Bake for about 35 minutes or until golden brown.
  6. Once cooled, garnish with chopped pistachios and maraschino cherries before serving.
