  • 1 medium onion, diced
  • 1 lb mushrooms, sliced (shiitake and cremini)
  • 4 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 lb baby potatoes, cubed
  • 2 cans white beans, drained and rinsed
  • 2 cups dairy-free milk

Instructions

  1. In a large pot or Dutch oven, melt the vegan butter over medium heat. Sauté the diced onion until translucent (about 5 minutes).
  2. Add sliced mushrooms, garlic, thyme, rosemary, salt, and pepper; cook until browned (7–10 minutes).
  3. Stir in cornstarch, tamari, and Dijon mustard. Pour in vegetable broth and add cubed potatoes; bring to a boil.
  4. Reduce heat to simmer for 15–20 minutes until potatoes are tender.
  5. Mix in white beans and dairy-free milk; simmer for another 10–15 minutes until thickened.
