  • Pinch salt (optional)
  • 1 large egg (for filling)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together pumpkin puree, egg, sugars, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, nutmeg until well combined.
  3. Gently fold in flour, baking powder, baking soda, and salt until just combined.
  4. Pour two-thirds of the batter into the prepared loaf pan.
  5. For the cream cheese filling: In another bowl, mix softened cream cheese with an egg, sugar, and flour until smooth.
  6. Spread the cream cheese mixture over the batter in the pan and top with remaining pumpkin batter.
  7. Bake for approximately 48 minutes or until golden brown and set in the center.
  8. Let cool for 15 minutes before transferring to a wire rack to cool completely.
