  • 4 skinless salmon fillets
  • 1 cup orzo
  • 3 ears fresh corn
  • 2 ½ cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 4 garlic cloves (minced)
  • 1 yellow onion (finely chopped)
  • ¼ tsp salt
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tbsp Cajun seasoning
  • 3 sprigs of thyme (more for serving)

Instructions

  1. Prepare your ingredients by patting the salmon dry and seasoning it.
  2. Shuck the corn and cut the kernels off the cob.
  3. In a nonstick skillet, heat olive oil and butter over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown; then set aside.
  4. Lower heat and cook minced garlic and chopped onion until fragrant. Add salt, pepper, thyme, orzo, and corn; toast for a minute.
  5. Pour in chicken broth and bring to a boil. Simmer uncovered for about 10 minutes until orzo absorbs most liquid.
  6. Stir in Parmesan cheese and heavy cream; let simmer for another 2 minutes.
  7. Return salmon to skillet, heating through for another few minutes.
  8. Serve garnished with fresh herbs and chili flakes.
