  • 1 lb boneless skinless chicken breasts
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Cajun seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 cloves garlic, minced
  • Fresh chopped parsley for garnish

Instructions

  1. Cook the rotini pasta in a large pot of salted boiling water until al dente (9-11 minutes). Reserve ½ cup of pasta water, then drain.
  2. In a skillet, heat olive oil and 1 tablespoon of butter. Sauté chicken strips seasoned with Cajun seasoning until golden brown (8-10 minutes). Set aside.
  3. In the same skillet, melt another tablespoon of butter, add minced garlic, then pour in heavy cream and whole milk. Stir in Velveeta until melted, followed by mozzarella and Parmesan cheese. Simmer until thickened.
  4. Toss the cooked rotini with the sauce, adding reserved pasta water as needed for consistency.
  5. For the Cajun butter drizzle, melt remaining butter in a small pan and mix with Cajun seasoning.
  6. Serve the cheesy rotini topped with chicken and drizzle with Cajun butter.
