  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper
  • 1 tbsp olive oil for frying
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, Italian herbs, salt, and pepper. Mix well.
  2. Shape the mixture into small balls (about 1 inch in diameter) and set aside.
  3. Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides; remove and set aside.
  4. In the same skillet, add sliced onion and bell peppers; cook until softened. Stir in minced garlic and smoked paprika.
  5. Pour in chicken stock and heavy cream along with tomato paste; stir to combine. Return meatballs to the skillet and let simmer for about 10-12 minutes.
  6. Garnish with chopped fresh parsley before serving.
