  • 1 lb boneless, skinless chicken breast, diced

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth

  • 8 oz uncooked penne or rotini pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

  3. Return chicken to the pot; add chicken broth and bring to a simmer. Stir in uncooked pasta.
  4. Cook until pasta is tender (10-12 minutes). Lower heat; stir in heavy cream and then cheese until melted.
  5. Serve hot with extra cheese if desired.
