  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tbsp vegetable or coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp chili flakes (to taste)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Heat oil in a heavy-bottomed pot over medium heat. Sauté onion until translucent, then add garlic and ginger; cook for another minute.
  2. Add cubed beef chuck, season with salt, pepper, cumin, turmeric, and chili flakes. Sear until browned on all sides (about 5-7 minutes).
  3. Stir in red curry paste to coat the beef evenly. Pour in coconut milk and beef broth; mix well.
  4. Bring to a gentle simmer, reduce heat to low, cover pot, and cook for 2-3 hours until beef is tender.
  5. Stir in lime juice before serving.
