  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions for garnish
  • Extra shredded cheese for garnish
  • Crushed tortilla chips for garnish

Instructions

  1. Heat a large pot over medium heat and brown the ground beef. Break apart as it cooks.
  2. Add diced onion and minced garlic; sauté until translucent.
  3. Pour in beef broth, diced tomatoes, corn, black beans, and potatoes; stir well.
  4. Season with smoked paprika, chili powder, cumin, salt, and pepper; mix thoroughly.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes until potatoes are tender.
