  • 500g potato gnocchi
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 5 oz fresh baby spinach
  • 1/2 cup grated Parmesan cheese (plus more for serving)
  • Dried oregano
  • Dried basil
  • Salt and black pepper to taste

Instructions

  1. Bring salted water to a boil in a large pot and cook gnocchi according to package directions until they float; drain.
  2. In a skillet, heat olive oil over medium heat, then sauté onion until softened. Add garlic and cook until fragrant.
  3. Stir in tomato paste and cook for another minute before adding crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 15–30 minutes.
  4. Remove from heat and stir in heavy cream and Parmesan until smooth.
  5. Add spinach until wilted, then combine with cooked gnocchi. Serve hot with extra Parmesan on top.
