  • 4 croissants
  • 3 cups chopped romaine lettuce
  • ½ cup shaved Parmesan cheese
  • 45 boneless skinless chicken thighs
  • 1 large egg
  • 2 tbsp flour
  • 3 tbsp cornstarch
  • 1 tsp garlic (minced)
  • ½ cup olive oil
  • ½ cup shaved Parmesan cheese
  • 2 tbsp fresh lemon juice
  • 3 anchovy fillets
  • 1 tbsp garlic (minced)
  • 1 tsp Dijon mustard
  • 1 tsp red apple vinegar
  • ½ tsp Worcestershire sauce
  • ½ tsp black pepper
  • Salt to taste
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. In a large bowl, mix marinade ingredients; coat chicken and marinate for at least 20 minutes.
  2. Toast panko in melted butter over medium-low heat until golden brown; set aside.
  3. Blend Caesar dressing ingredients until smooth and set aside.
  4. Heat canola oil to 350°F (175°C) and fry marinated chicken until golden brown (8–10 minutes). Drain on a wire rack.
  5. In a bowl, mix romaine, dressing, toasted panko, and Parmesan. Assemble by spreading dressing on toasted croissant bottoms, adding crispy chicken, salad mixture, more cheese, and topping with croissant tops.
