  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 oz crushed fire-roasted tomatoes
  • 6 oz cream cheese, at room temperature
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (8 oz) tomato paste
  • 1 can (4 oz) diced green chilies
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt to taste
  • 23 cups chicken or beef broth
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt for serving

Instructions

  1. Chop onions and poblano peppers; measure spices.
  2. Brown ground beef in a skillet over medium heat; drain excess fat.
  3. Transfer meat to slow cooker and add remaining ingredients except cream cheese and cheddar.
  4. Stir well and cover; cook on low for about 120 minutes.
  5. Add cream cheese and cheddar; mix until melted.
  6. Stir in drained chili beans; remove bay leaves before serving.
  7. Serve topped with avocado, Greek yogurt, cilantro, and green onions.
