  • 3 tbsp sugar (or granulated sugar-free sweetener)
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon or pumpkin pie spice
  • 1/3 cup pumpkin puree
  • 1 egg (or flax egg)
  • Optional: mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In one bowl, whisk together the dry ingredients: almond flour, sugar, baking powder, salt, and spice.
  3. In another bowl, mix the wet ingredients: pumpkin puree, egg (or flax egg), and optional chocolate chips.
  4. Combine wet and dry mixtures until just blended.
  5. Fill muffin tins evenly and bake for 10 minutes for mini muffins or 15 minutes for larger sizes.
