- 1½ cups cherry tomatoes
- 8 oz fresh mozzarella
- ½ large red onion (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- Pinch salt
- Pinch pepper
- Prepare the dressing by whisking together olive oil, balsamic vinegar, oregano, basil, salt, and pepper in a small bowl. Set aside.
- Peel the cucumber and score the skin with a fork. Dice into small pieces and place in a mixing bowl.
- Quarter the cherry tomatoes and add them to the bowl along with diced onions (if using).
