  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • ⅓ cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, melted
  • 1 cup fresh peaches, peeled and diced
  • Vegetable oil for frying
  • For the glaze: 1 cup powdered sugar, 2–3 tablespoons milk or cream, and ½ teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, mix milk, egg, vanilla extract, and melted butter until combined.
  3. Combine wet and dry ingredients until just mixed; gently fold in diced peaches.
  4. Heat about 2 inches of vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil; fry for 2–3 minutes on each side until golden brown.
  6. Drain on paper towels and prepare the glaze by mixing powdered sugar with milk and vanilla until smooth.
  7. Drizzle or dip fritters in glaze while warm before serving.
