  • 1 cup broccoli florets
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tbsp butter
  • 2 tbsp butter
  • 1 cup milk (more if needed)
  • 1 tsp olive oil
  • 1 tsp olive oil

  • 1 tsp paprika
  • Salt & black pepper, to taste

Instructions

  1. Prepare the Mashed Potatoes: Boil peeled and cubed potatoes in salted water until fork-tender (about 12-15 minutes). Drain, then mash with butter, milk, salt, and pepper until creamy.
  2. Cook the Vegetables: Heat olive oil in a skillet over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for 4-5 minutes until tender yet vibrant.
  3. Cook the Shrimp: In another skillet, melt butter with olive oil over medium heat. Sauté minced garlic for 30 seconds, then add shrimp, paprika, salt, and pepper. Cook for 2-3 minutes per side until pink and slightly golden.
  4. Assemble: Serve mashed potatoes on one side of the plate; arrange shrimp and veggies on the other.
