- 8 chicken drumsticks
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp paprika
- Salt & pepper
- Fresh parsley, chopped (for garnish)
- 600 g potatoes, cubed
- 3 carrots, chopped
- 1 red bell pepper, chopped
- 2 tbsp olive oil
- Salt & pepper
- Preheat the oven to 200C (390F).
- In a mixing bowl, combine olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Toss in the chicken drumsticks until well coated.
- In another bowl, mix cubed potatoes and chopped carrots with olive oil, salt, and pepper.
- Spread the veggies on a baking tray and nestle the marinated drumsticks among them.
- Roast for 40-45 minutes, turning halfway through until the chicken is golden brown and cooked through.
- Garnish with fresh parsley before serving.
