  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper
  • Fresh parsley, chopped (for garnish)
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped
  • 2 tbsp olive oil
  • Salt & pepper

Instructions

  1. Preheat the oven to 200C (390F).
  2. In a mixing bowl, combine olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Toss in the chicken drumsticks until well coated.
  3. In another bowl, mix cubed potatoes and chopped carrots with olive oil, salt, and pepper.
  4. Spread the veggies on a baking tray and nestle the marinated drumsticks among them.
  5. Roast for 40-45 minutes, turning halfway through until the chicken is golden brown and cooked through.
  6. Garnish with fresh parsley before serving.
