  • 1 salmon fillet (150-180g)
  • 1 tsp olive oil
  • 1 garlic clove, smashed
  • 1/2 tsp paprika
  • 1/2 tsp dried herbs (thyme, dill, or Italian blend)
  • Salt & black pepper to taste
  • 1 medium potato, peeled and diced
  • 1 tbsp olive oil or butter
  • Salt, pepper, and optional garlic powder
  • 1 cup baby carrots
  • 1 tsp olive oil or butter
  • 1 tsp honey or maple syrup
  • Salt and red pepper flakes (optional)
  • 1 cup broccoli florets
  • Salt & pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub the salmon fillet with olive oil, smashed garlic, paprika, dried herbs, salt, and black pepper. Place on a baking sheet and bake for 12-15 minutes until flaky.
  3. Boil diced potatoes in salted water for 5-6 minutes until just tender. Transfer to a frying pan and cook in olive oil or butter until golden brown.
  4. Sauté baby carrots in olive oil or butter with a bit of water. Add honey (or maple syrup) and cook until glossy.
  5. Steam or sauté broccoli florets in another pan with salt until bright green.
  6. Serve all components on a plate and enjoy!
