  • 4 chicken fillets
  • 1 tbsp olive oil
  • 1 shallot (finely chopped)
  • 4 garlic cloves (minced)
  • 2 tbsp tomato paste
  • ½ cup chicken broth
  • 1 can (14 oz) cherry tomatoes (or crushed tomatoes)
  • 2 mozzarella balls (chopped)
  • Fresh basil for garnish
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tsp dried basil

Instructions

  1. Season the chicken fillets with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 5 minutes per side until browned and cooked through. Remove from the skillet and cover to keep warm.
  3. In the same skillet, sauté minced garlic and shallot until fragrant. Deglaze with apple vinegar and add tomato paste, salt, pepper, and dried basil.
  4. Stir in chicken broth and canned tomatoes; simmer for about 5 minutes.
  5. Nestle the chicken back into the sauce, top with mozzarella and chopped basil. Simmer until cheese melts slightly.
