  • 1 chicken breast
  • 1 medium carrot
  • 45 baby potatoes
  • A handful of cherry tomatoes
  • 1 cup baby spinach
  • 1 lemon wedge
  • 1 tsp olive oil
  • Salt
  • Black pepper
  • Garlic powder

Instructions

  1. Cook the Vegetables: Boil or steam carrots and baby potatoes until fork-tender (about 8-10 minutes). Toss with salt and set aside.
  2. Grill the Chicken: Season chicken breast with salt, pepper, and garlic powder. Grill or pan-sear for 5-6 minutes per side until golden brown. Slice into strips.
  3. Assemble the Bowl: Layer baby spinach at the bottom of a bowl. Add cooked veggies, cherry tomatoes, and sliced grilled chicken on top.
  4. Finish with Lemon: Squeeze fresh lemon juice over the bowl and drizzle lightly with olive oil. Add extra black pepper if desired.
