1 chicken breast
1 medium carrot
45 baby potatoes
A handful of cherry tomatoes
1 cup baby spinach
1 lemon wedge
1 tsp olive oil
Salt
Black pepper
Garlic powder
Instructions
Cook the Vegetables: Boil or steam carrots and baby potatoes until fork-tender (about 8-10 minutes). Toss with salt and set aside.
Grill the Chicken: Season chicken breast with salt, pepper, and garlic powder. Grill or pan-sear for 5-6 minutes per side until golden brown. Slice into strips.
Assemble the Bowl: Layer baby spinach at the bottom of a bowl. Add cooked veggies, cherry tomatoes, and sliced grilled chicken on top.
Finish with Lemon: Squeeze fresh lemon juice over the bowl and drizzle lightly with olive oil. Add extra black pepper if desired.
