  • 4 cups baby potatoes, halved
  • 1 bunch asparagus
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss halved potatoes with olive oil, minced garlic, salt, and pepper in a mixing bowl. Spread them on a baking sheet and roast for 25-30 minutes until golden brown.
  2. Prepare asparagus by placing it on another baking sheet. Drizzle with olive oil and season with salt and pepper. Top with shredded cheese. Bake alongside potatoes for the last 10 minutes until the cheese is bubbly.
  3. Season salmon fillets with paprika, garlic powder, salt, and pepper. Heat a grill pan over medium-high heat with olive oil, then grill each fillet for 4-5 minutes per side until cooked through.
  4. Serve the grilled salmon with roasted garlic potatoes and cheesy asparagus on plates or a large platter garnished with fresh herbs.
