6 ounces fresh mozzarella pearls
1 demi baguette
½ cup basil pesto
gel food coloring (black)
12 ounces cherry tomatoes
olive oil
salt
black pepper
red pepper flakes
fresh basil for garnish
balsamic vinegar glaze
Instructions
Preheat the oven to 350°F (175°C).
Place mozzarella pearls in a silicone skull mold and bake for 6-7 minutes until melted.
Press mozzarella firmly into molds and cool completely.
Increase oven temperature to 475°F (245°C) and roast halved cherry tomatoes drizzled with olive oil, salt, pepper, and red pepper flakes for 10-15 minutes.
Slice the baguette and toast in the oven for about 8-10 minutes until lightly golden.
In a mixing bowl, combine basil pesto with black food coloring until desired shade is achieved.
Spread black pesto over toasted baguette slices and return to the oven for another 8-10 minutes.
Top bruschetta with roasted tomatoes and mozzarella skulls before serving.
