  • 1/4 cup oil (vegetable, canola, melted coconut, or light olive oil)
  • 1 tsp. vanilla extract
  • 1 cup gluten-free all-purpose flour
  • 2 tsp. pumpkin pie spice
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350ºF (175ºC) and line a muffin tin with liners.
  2. In a large bowl, whisk together pumpkin puree, eggs, maple syrup, oil, and vanilla extract until well combined.
  3. In a separate bowl, mix gluten-free flour, pumpkin pie spice, baking soda, and salt.
  4. Gradually add dry ingredients to wet ingredients and stir until just combined; gently fold in chocolate chips.
  5. Fill muffin tins two-thirds full and bake for 24-27 minutes or until a toothpick comes out mostly clean.
  6. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
