  • 1 cup grated zucchini (squeezed dry)

  • 1/4 cup olive oil (or avocado oil)
  • 1/2 cup maple syrup (or honey)

  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour (or spelt flour)

Instructions

  1. Preheat your oven to 350°F. Line a 9"x5" loaf pan with parchment paper or spray it with cooking spray.
  2. In a large bowl, mash the bananas until smooth. Mix in the grated zucchini, egg, oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt until combined.
  3. Gently fold in the flour using a spatula until just combined; avoid overmixing.
