  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon chipotle peppers in adobo sauce
  • 1 cup cooked rice (white or brown)
  • black beans
  • cherry tomatoes
  • corn
  • red onion
  • avocado

Instructions

  1. In a small bowl, whisk together honey, chipotle peppers, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice to make the sauce.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook for 6–8 minutes per side until golden brown and fully cooked (165°F internal temperature).
  3. Drizzle the honey chipotle sauce over the chicken while it's still in the skillet; let it rest for 5 minutes before slicing.
  4. Assemble each bowl by adding rice and topping it with black beans, cherry tomatoes, corn, diced red onion, avocado slices, and cilantro.
  5. Optionally drizzle with lime dressing made from olive oil and lime juice.
