  • 1/2 tsp EACH ground cumin, smoked paprika, onion powder, garlic powder
  • 1/4 teaspoon pepper
  • 14 1/2 teaspoon chipotle chili powder (optional for more heat)
  • 2 medium avocados (chopped)
  • 1 cup cherry tomatoes (quartered OR 2 Roma tomatoes, seeded and chopped)
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper (chopped)
  • 1 jalapeño pepper (diced, seeds removed)
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove (minced, or 1/4 tsp garlic powder)
  • 2 tablespoons lime juice
  • 1/4 tsp EACH ground cumin, salt
  • 1/8 tsp pepper (or more to taste)

Instructions

  1. In a mixing bowl, combine olive oil, lime juice, lime zest, and spices.
  2. Marinate pounded chicken breasts in the mixture for at least 30 minutes.
  3. Heat your grill or skillet over medium-high heat and cook the chicken for about 5 minutes on each side until fully cooked.
  4. For the Avocado Salsa, mix chopped avocados with other salsa ingredients in a separate bowl.
  5. Slice the cooked chicken and serve topped with avocado salsa.
