  • 1 teaspoon vanilla extract

Instructions

  1. In a medium heavy-bottom saucepan, combine water, sugar, and corn syrup. Heat over medium-high until it reaches 240°F (use a candy thermometer).
  2. While the syrup is heating, whip egg whites and cream of tartar in a stand mixer until soft peaks form.
  3. Once the syrup reaches temperature, slowly pour it into the whipped egg whites while mixing on medium speed.
  4. Increase speed to medium-high and continue whipping for about 7-8 minutes until thickened and glossy. Add vanilla extract and mix until incorporated.
