  • 8 oz cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 23 tbsp key lime juice
  • 1 tsp key lime zest
  • Pinch of salt
  • Optional: a drop of green food coloring for tint

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, and salt. In a measuring cup, combine milk, key lime juice, zest, and vanilla extract.
  4. Gradually mix the dry ingredients into the butter mixture alternately with the milk mixture until just combined.
  5. Divide the batter between the prepared pans and bake for 28-32 minutes until a toothpick comes out clean. Cool in pans before transferring to wire racks.
  6. For the frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar and mix in key lime juice, zest, and salt until fluffy.
  7. Once cakes are completely cooled, frost between layers and on top/sides as desired.
