  • 1 carrot (peeled and cut into sticks)
  • 1 zucchini (sliced into rounds)
  • 2 garlic cloves (whole or halved)
  • 1 tbsp butter or olive oil
  • 1 tbsp fresh parsley or dill (chopped)
  • Juice of 1 lemon
  • Salt and black pepper to taste

Instructions

  1. In a skillet, heat half the butter over medium heat. Sauté garlic, carrot, and zucchini for 6-8 minutes until tender; season with salt and pepper.
  2. Season the fish fillet with salt and pepper. In the same pan, melt the remaining butter and sear the fish over medium-high heat for 3-4 minutes per side until golden brown. Add lemon juice during the last 30 seconds.
  3. Plate the fish alongside sautéed veggies, spooning any pan sauce over top and garnishing with fresh herbs.
